Lemon Almond Crispy Treats Cupcakes

Crispy Treat Cupcake Ingredients

☁️ 5 cups Crisp Rice Cereal

☁️ 2 Tbsp Coconut Oil

☁️ 2 Tbsp vegan butter

☁️ One (10 ounce) package of Dandies® Mini Marshmallows or Dandies® Marshmallows

☁️ 1 tsp almond extract

☁️ 12 raw almonds, optional (for garnish)

Frosting Ingredients

☁️ 3 cups powdered sugar

☁️ 1/2 cup vegan butter

☁️ 1 tsp vanilla extract

☁️ 2 Tbsp lemon juice

☁️ zest of one lemon

Crispy Treat Cupcake Instructions

In a microwave safe bowl, combine Dandies®, almond extract, vegan butter, and coconut oil. In 30 second intervals, with a quick stir between each, microwave until marshmallows are fully melted. Mix in cereal and stir until evenly coated with marshmallow cream. Press mixture into lined cupcake pan. Let cool and prepare frosting.

Frosting Instructions

In a stand mixer combine vegan butter, vanilla, lemon zest, lemon juice, and powdered sugar. Mix until thoroughly combined. Add more powdered sugar, if needed to reach desired consistency.

Once crispy treats cupcakes are cooled you can frost them. Optionally garnish with an almond on top for a little extra treat!
